I take chicken that has been pulled, mix in a little adobe sauce and ranch (not too much or it isn't healthy anymore!), some steamfresh rice & veggies pre-steamed, tortilla wraps, and a little shredded cheese. He also grills a ton - pork loin, steaks, asparagus, corn, carrots and onions, peppers, zucchini...<br /><br />I get lots of ideas from Real Simple and keep them all in a notebook that we reference a lot. A baking dish with chick...Balsamic Chicken Breasts<br /><br />A baking dish with chicken, seasoned with pepper and salt and balsamic vinegar poured in. 400 degrees for twenty minutes, lower oven to 350 and flip the breasts, another twenty minutes and done. Serve with a reduced balsamic vinegar from the stove, or as I do it with the excess vinegar from the baking. It's an awesome recipe if you like balsamic vinegar. When I'm feeling ...I eat rice near constantly. When I'm feeling particularly adventurous-but-lazy, I'll do a stir fry with chicken or something. Veggies and protein and some kind of sauce, over rice. You don't even really have to know how to cook to make that.<br /><br />Also, if you're fish-eaters... and I remember just now that you aren't, so never mind.
